Black beans with mango sauce


Ingredients
• 1 package (weighing 425 grams) of black beans washed and refinery
• 1 fruit mango diced
• ½ cup of red onion cut into thin slices
• 2 of grilled tomato fruit
• 1 tablespoon of ginger roots
• 1 cup of fresh coriander leaves
• 1 tablespoon of lemon peel
• 1 tablespoon of orange peel
• 4 tbsp lemon juice
• 1 fruit juice from oranges
• 2 tbsp olive oil
• Salt and fresh ground black pepper

Grilled tomato
• 2 large fruit size of tomatoes, cut into 4 quarters
• 1 tablespoon of olive oil
• salt and fresh ground black pepper

Preparation
1. In a large bowl place beans with diced mango, red onion, grilled tomato and grated ginger root and lemon coriander and preached orange and a little of the oil
2. Season the mixture with salt and pepper
3. cover the pot then kept in the fridge until the submission

Grilled tomato
1. Heat grill over low heat and then cut tomatoes into 4 quarters and then stacked in a baking tray and sprinkle over olive oil and a little sea salt and fresh black pepper to taste
2. put the tray in the oven for 5 to 7 minutes until slightly brown and tender then remove from oven and set aside to cool
